We love pork in our family. As you’ve probably noticed from my past recipes (shameless plug – pork chops with peaches and blue cheese and cherry coke slow cooker pork.
We had made the cherry coke pork and put the leftovers in the freezer. We pulled the leftovers out and were having sandwiches. I was getting so sick of sandwiches so I decided to make something else. Enter: BBQ Pork Nachos. These were made on a total whim and are a giant YES!
I did have to run to the store to get most of my ingredients but it was worth it. I even ended up making a half of a pan the next day for lunch. Aaaand I ate the whole thing. Don’t judge me.
Here’s what you need:
Ingredients:
*1 1/2 cups shredded pork
*1/2 cup of your favorite BBQ sauce (and extra for topping)
*1/4 – 1/2 cups red onions, diced
*4 oz (1/2 a brick, about 1 cup) shredded Monterrey Jack cheese
*4 oz (1/2 a brick, about 1 cup) shredded cheddar cheese
*Your favorite tortilla chips
*Your favorite toppings (extra BBQ, sour cream, etc)
Directions
*Preheat the oven to 400.
*Chop up the pork very fine. This is super easy to do when it is cold.
*Place the pork into a skillet and heat through.
*Add 1/2 cup of BBQ sauce.
*Stir until combined.
*Line a 13×9 cake pan with aluminum foil.
*Lay out chips on the pan.
*Cover the chips with the pork, onions and cheese.
*Put in the oven for 10 minutes, or until cheese is melted.
*Add some more bbq sauce and your optional toppings.
My husband and I finished off an entire pan. Don’t judge. It was so delicious!
