Meal Planning Monday: Caramel Apple Cheesecake Bars

Do I have your attention yet? OH MAN these were delicious.

We were going over to a friends’ house for dinner and I wanted to bring a dessert. I have been eating lots of apples this pregnancy (so has D) so I searched for an apple recipe. Then I saw the word “cheesecake” and I was hooked.

The recipe is from here, but honestly, there are quite a few pop ups and ads so I will just type it out for you here.

Ingredients:
*2 cups of flour
*1/2 cup brown sugar
*1 cup butter (2 sticks) cold, cut into chunks (I cut mine into tablespoons and then cut those into 4 pieces)
*2 8 oz packages of cream cheese, softened
*1/2 cup of sugar plus 2 tablespoons, separate
*2 eggs
*1 teaspoon vanilla extract
*3 Granny smith apples, peeled, cored and chopped
*1/2 teaspoon cinnamon
*Caramel topping

Streusel Topping:
*1 cup brown sugar
*1 cup flour
*1/2 cup oats
*1/2 cup butter, cold, cut in chunks (did this the same way I did the other butter)

Directions:
*Preheat the oven to 350 degrees.
*Combine flour, brown sugar and butter chunks and use your hands to combine until the mixture is crumbly. Almost like wet sand. Press evenly into a baking pan (I sprayed mine with Pam – better safe than sorry!) and bake for about 20 minutes until lightly browned.
*Mix cream cheese and 1/2 of sugar until blended and add eggs and vanilla. Pour over crust when you remove it from the oven.
*In a separate bowl, mix together apples, 2 tablespoons of sugar and cinnamon.
*Pour over cream cheese mix evenly.
*Combine all streusel toppings in a bowl (using hands again) and then spread over apple mixture.
*Bake for 30 minutes.
*After slicing, add caramel if desired.

Since it wouldn’t be a Mostly Under Control blog post without a kitchen mishap, this happened…I’m pretty sure this is not supposed to happen to apple corers…

This also lead to me slicing open my hand. In 2 places. So my hubby had to step in and do the streusel topping mix with his hands because, well, blood.

I added the caramel later (because I forgot) and I’m glad I did because Randy doesn’t like caramel. Plus he always just has to be difficult. 😉
