Dylan loves hot dogs. Go ahead, judge me. I love them also. When we go to Portillo’s, he orders 2 and eats them, with fries.
True story, the other day, my sister had him for the day and we were planning on having mac and cheese for dinner. Well while he was gone, I decided we were going to go to Buffalo Wild Wings instead (he loves their mini corn dogs). So he gets home, and I say “Dylan, what’s better than mac and cheese?” And without skipping a beat, he says “hot dogs and mac and cheese?”
That’s my boy 🙂
Since he loves BWW’s mini corn dogs so much, I thought I would attempt to make our own at home and it couldn’t have been easier. So easy that I made them for lunch. I never make anything for lunch. The most complicated thing I make for lunch is macaroni and cheese.
Ingredients:
*Corn bread batter (I use the boxed Jiffy stuff)
*4 hot dogs (we use beef hot dogs. It makes me feel “better” about my choice)
Directions:
Preheat the oven to 400. Prepare the corn bread batter and place about a tablespoon of batter into each mini muffin cup. They should be about 1/3 of the way full.
Chop the hotdog up into 6 pieces for each hot dog.
(Side note, when I win the lottery, I’m having a sky light put into my kitchen so I don’t have to walk over to the window to take pictures. The lighting is terrible!)
Push a hot dog piece into each muffin cup.
Bake for 10 minutes.
Mmmmm! Mine came out (dare I say?) PERFECT!
Next time I am going to make 2 batches and freeze some so I can toss them in the oven for quick lunches.
