I hate wasting food. Like, despise it. So when I see something is going to go bad soon in our fridge (mostly fruits and vegetables) I scramble for an idea to preserve it and keep it longer. Most of the time that means cooking and freezing or just freezing. We have tons of frozen pureed veggies and fruits that I pop into smoothies (because Reagan decided after 3 weeks she was so over purees) all the time.
When I was pregnant with both my kids, I could not get enough watermelon. I bought it every single time I went to the grocery store. Luckily (ha) I was pregnant both times during the summer so it was readily available and cheap. I bought some watermelon for our Memorial Day party but completely forgot to cut it up (surprise, surprise) so we had this small watermelon all to ourselves. Bummer. 😉
I dehydrated half of it (OMG it tastes like candy) and cut up the other half. Unfortunately, watermelon goes bad quickly I feel like. So we were clearing out the fridge the night before garbage day and did an assessment. It had to be revived.
Enter these. I bought them on amazon (of course) a few months ago and I am obsessed with them. We mostly do apple juice and iced tea because my produce is all already frozen. So, enter my almost done watermelon! yeah!
This is a fantastic 2 ingredient recipe. All I used was watermelon and vanilla greek yogurt. I have seen adding salt brings out the flavor but I just couldn’t bring myself to add that.
Ingredients:
*2 cups (mine was an overlfowing 2 cups so probably 2 and 1/4 cups) cubes watermelon
*1/4 cup vanilla Greek yogurt
Directions:
*Blend both ingredients in a blender until smooth. Pour into popsicle molds. Freeze. Enjoy.
It took everything out of my not to just drink the puree – it smelled so ridiculously good.
These were perfect for a hot day snack. Even Reagan could enjoy them because of the minimal ingredients
